Baked Spicy Eggs with tomato and Feta Cheese (Femina 8 August2008) |

1 onion finely chopped 2tbs olive oil 1 can chopped tomatoes 1 red chilli, chopped Salt and pepper 8 eggs ½ cup crumbled feta ½ cup cream Coriander leaves for sprinkling Gently soften the onion in heated oil. When melting soft, stir in the tomatoes and chilli. Simmer fairly briskly , stirring now and again, for 5 to 10 minutes, until slightly reduced. Add seasoning to taste. Spoon the sauce into 4 baking dishes and add two eggs to each one. Sprinkle with feta and spoon over the cream. Bake 190°C for 10 – 15 minutes or until the yolk is still a little soft and the whites set. Add seasoning to taste and sprinkle with coriander leaves (or parsley). Serves 4
